How is tequila made?
Tequila is primarily made from the Weber blue agave plant, also called the agave tequilana. And as you may have guessed already, the name ‘tequila’ came from that. To describe it simply, the agave plant almost looks like a bunch of long green spikes pointing in all directions.
To make the tequila spirit, the bulb (also called the piña) is baked, which creates a lot of juice. The juice is then put in big barrels with yeast and left for fermentation. If you are wondering how long it takes to make tequila, usually it takes around 8 years. However, some tequila producers will try to ferment the agave juice for more than 15 years. A bottle of long-fermented tequila can easily sell at a premium price.
Finally, it is worth noting that real tequila is only made in Mexico. Any other agave-based alcoholic drinks are called mezcal and not tequila.

That being said, you better follow the company’s releases closely, because the latter only produces around 100 bottles a year, which makes this spirit pretty rare, on top of being extremely expensive. Aged in sherry oak for several years, the taste is as good as it gets.
1800 Coleccion Tequila Añejo
Like in the name, a bottle of Coleccion Tequila will cost $1800. To make it, the extract of agave, which is cooked in traditional stone ovens, is distilled twice. The distilling process lasts for 10 years and gives a beautiful golden color with a distinct almond taste.
